This recipe is fantastic as long as you are not dieting.
4 Boned and skinned Duck Breasts.
1 Pint of Double Cream.
2 Large finely diced Shallots.
½ Pound of Portobello Mushrooms, finely sliced.
1 Large clove of Garlic finely sliced.
1 Pound of Camembert Cheese.
Salt and Crushed Black peppercorns to taste.
Finely chopped fresh Basil.
2 desert spoons of Extra Virgin Olive Oil.
Preparation:- Cut each duck breast into 8 evenly sized pieces and brown in a frying pan with the olive oil, remove the duck and add the shallots, cream, basil, salt and pepper to taste and bring to the boil.
Add the duck and transfer to a baking dish.
Finely slice the camembert cover the contents of the baking dish.
Bake in a pre heated oven (Gas Mark 5 , 190 degrees C. 375 degrees F.) for twenty minutes or until golden brown.
Serve with rice or fresh vegetables.
Serves 4 people.
